New this fall, "Bean to Bar - Intro to Chocolate Making"  Students will learn how to and make bean to bar chocolate. Class will cover topics such as roasting, cracking, winnowing, tempering, molding, cooling and packaging. Maybe even a treat to take home!

"I am an aspiring chocolate maker that has worked in the IT industry since leaving university. I’ve been asked a few times “Why chocolate?” I have never really been sure how to answer that question. I believe it was curiosity. I have always loved food and cooking. I wanted to figure out how to make chocolate from scratch. I quickly found out this is a very difficult thing to do well. After numerous years of working in the IT industry. It was time for a change. I decided to try and turn this hobby into a business. My first sale was at the Revelstoke Winter Market in February 2019, a week before Valentines. Since then it has been a lot of work, tears, laughter, frustration and joy.

I was asked once “How does an IT guy figure out how to make chocolate, I thought it took many years?” It does. Plus a lot of help, mistakes and persistence."
